Why Professional Sharpening Beats Home Methods

Most “as-seen-on-TV” sharpeners actually shave metal off your blade in a way that weakens the steel. We use a multi-step industrial process:

  • Water-Cooled Grinding: We use a constant flow of water to ensure the blade never gets hot. Heat ruins the “temper” (hardness) of high-end steel, making it brittle.
  • Bevel Customization: We sharpen to the exact angle your knife was designed for—usually 15∘ for delicate Japanese steel and 20∘ for rugged German or American cutlery.
  • Precision Honing: After grinding, we use high-grit ceramic or leather strops to remove the microscopic “wire edge,” leaving a mirror-polished finish.
  • Tip & Bolster Repair: If you’ve dropped your favorite knife and snapped the tip, we can reshape the blade to make it functional again.

The Scranton Grinder 4-Point Inspection

Every knife brought to 1020 Hemlock Street undergoes a rigorous check:

  1. Blade Straightness: We check for “waves” or bends in the steel.
  2. Edge Geometry: We look for chips or “recurves” caused by poor previous sharpening.
  3. Handle Integrity: For your safety, we inspect the rivets and handle for cracks or looseness.
  4. Sharpness Testing: Every blade must pass a paper-slice test before it leaves our shop.

Knife Sharpening FAQ

How long does it take to get my knives sharpened? We offer a fast turnaround. Most individual knives can be sharpened while you browse our DeWalt and Stihl inventory. For large sets (10+ knives), we typically offer a 24-hour turnaround.

Can you sharpen serrated bread knives? Yes! Most shops can’t handle serrations, but we have specialized tapered stones to sharpen each individual “tooth” of a serrated blade.

Do you sharpen Japanese/High-Carbon steel? Absolutely. We understand the delicate nature of high-carbon and Damascus steel. We use a low-speed, high-grit process to ensure these premium blades are treated with the respect they deserve.
